Vinification: Gentle pressing of the grapes to preserve the integrity of the clusters as much as possible. Fermentation begins with selected yeasts using only the “flower must,” approximately 40%. Secondary fermentation takes place the following spring, followed by aging “sur lie” for a minimum of 24 months.

Tasting notes: its balance comes from Pinot Noir grapes. After a long bottle ageing, it is a synthesis of elegance. . It has a perfect balance between fruity nuances of white-fleshed peach and pear and hints of toasted nuts and fresh bread. Pale straw color with a fine and persistent perlage. On the palate it has an elegant creaminess with a long, persistent aftertaste.

Pairings: Excellent as an aperitif, it pairs well with light first courses, shellfish, sushi, and white meats. Also highly recommended with vegetarian dishes.
