Vinification: Gentle pressing of whole grapes to preserve the integrity of the clusters as much as possible. Fermentation begins at 18°C with selected yeasts in stainless steel, followed by transfer to French oak barriques where the wine rests on its lees for a minimum of 8 months with regular “bâtonnage.” continues. Bottling takes place before the beginning of summer, followed by aging in glass for a minimum of 6 months.

Tasting notes: A wine with an intense straw yellow colour and golden highlights. It has characteristic aromas of yellow fruit, pineapple and acacia together with light hints of vanilla and dried fruit given from the oak barrels in which the wine is aged. On the palate, it is typical, soft and balanced, with a lively freshness and good sapidity, and a pleasant aftertaste of roasted hazelnuts.

Pairings. It pairs very well with shellfish in general, seafood first courses such as pasta and risotto, fish dishes, and mixed fried seafood.
