Vinification: Gentle destemming and crushing of the grapes, fermentation initiated after cold maceration for 36-48 hours to extract the grape variety’s typical characteristics to the fullest. Fermentation in stainless steel with temperature control, regular pump-overs and punch-downs to obtain a high-quality product destined for aging in barriques. Afterwards, the wine is aged for 12 months in wood, after which it is bottled and aged for an additional 12 months before being released for sale.

Tasting notes: Bright ruby red wine with light orange highlights. The nose is very typical, with delicate and elegant notes of small red fruits and cherries; spicy. The taste is full, harmonious, with good texture and persistence. The aging made for more than a year in the glass improves its great harmony.

Pairings. It pairs very well with earthy first courses like mushroom and truffle dishes, fresh and blue cheeses, game meats, and poultry.
