Vinification: Gentle destemming and crushing of the grapes. Fermentation in stainless steel with temperature control, regular pump-overs and punch-downs to obtain a high-quality product destined for aging in barriques. Afterwards, the wine is aged for 12 months in wood, after which it is bottled and aged for an additional 12 months before being released for sale.
Tasting notes: This wine has a deep, bright ruby red colour, a penetrating and pleasant aroma with elegant notes of undergrowth, black cherry and a hint of hay. In the mouth, it is rich, balanced and has good persistence. The short ageing in small French oak barrels enhances the characteristics of the grape variety.
Aging for over a year in glass enhances its great harmony. Pairings: It pairs well with flavorful first courses such as ravioli with braised meat, grilled red meats, and aged cheeses.
