Vinification: Soft destemming and crushing of the grapes, fermentation initiated in stainless steel with temperature control, regular pumping over and punching down. Malolactic fermentation in stainless steel at the end of alcoholic fermentation. Secondary fermentation takes place the following spring in an autoclave to impart the typical liveliness to the product.

Tasting notes: A wine of intense ruby red colour with violet highlights in the foam. Complex aroma of small berries, blackberries, currants, raspberries and black cherry. In the mouth it has a pleasant softness, in addition to a good texture and a tannin structure that highlight its characteristics.

Pairings: It pairs excellently with Varzi bread and salami, but in general, it complements all types of cured meats, as well as first courses like ravioli and risotto. It also pairs well with red meats and boiled meats, especially.
