Terroir: Clay-limestone with sand and small pebbles
Vine variety: pure Merlot
Type of system: Traditional trellis with simple Guyot pruning

Grape harvest: Traditional, by hand in crater
Average yield per hectare: 8000 kg /5500 litres

Vinification: Soft pressing of whole grapes to maximally preserve the integrity of the bunch and achieve a slight extraction of the typical coloring substances of the grape variety. Fermentation starts at 18°C with selected yeasts in stainless steel. At the end of fermentation, the wine remains in stainless steel on its lees for a minimum of 8 months before bottling.

Tasting notes: A wine with a bright rosé colour, a delicate bouquet of red fruits with a pleasant aroma of wild strawberries and raspberries, on a mineral texture. In the mouth it is soft and balanced, with a fresh and elegant finish.

Pairings. It pairs very well with various appetizers, soft cheeses, vegetable-based first courses, white meats and fish dishes, but also with pizza
